Pizza and Tacos....Yum!!!
I received my Blue Apron box last Thursday and made this scrumptious pizza....here is the link to their site. "Spinach and Fresh Mozzarella Pizza with Lemon and Chili Honey. Oh my, this was so good. I wondered how the honey and lemon zest would tie in, but it was oh so good. The box came with the pizza dough already made and all I had to do was roll it out. The tomato sauce consisted of a sliced red onion and garlic cooked together then spread on the dough. The spinach was cooked down and layered on the sauce then topped with the mozzarella cheese and lemon zest. After the pizza was cooked then the honey and chili's were drizzled on the pizza. Yep....I would make this again.
In the above picture is the pickled onions already cooked and the mushrooms sauteing. The next step was coating the avocado in rice flour and dropping them into the hot oil.
Here is another shot of the tacos with the recipe.....yes, I would do this one again. I am enjoying these meals and getting so many good ideas. I have decided to get one or two boxes a month.....that way I can keep up with the payments. A person can get a box every week if they so desire, guess it depends on the life-style. Blue Apron now offers a box of wine (6 small bottles) that pares with the meals that are sent to you.

Before and After Steak and St. Patrick Cards
So here is a picture of the steak in it's "before" state, fresh out of the package from the butcher....I salted and peppered it and poured some steak sauce on top, letting it sit in the frig for a few hours.
A picture of the steak "After" it was pan fried in coconut oil with some onions and mushrooms.....oh my was this ever a good piece of meat....not sure if it was the coconut oil that did the trick, but it sure did smell good.
Here you see the whole meal....salad, mashed potatoes, garlic bread and left-over cod fish from the night before. There was steak left over for Sunday's meal of Steak and eggs and English muffins. Oh Yum!!!!

Happy Valentine's Day - Steak and Cards
I salted and peppered it and put a little steak sauce on it and let it sit in the frig for a couple of hours. When it came time to cook it, I sauteed some mushrooms and onions in coconut oil. (no, I could not taste the coconut). Took the mushrooms and onions out of the pan and dropped the steak in. Cooking till the center was 100 degrees. Dished the steak and poured the mushrooms and onions on top. OH MY WAS THAT STEAK DE-LISH-OUS!!!! I took a picture of our Valentine's dinner all cooked up, mashed potatoes, salad, garlic bread and left over fish....that will be the next post. We still have enough steak left for dinner tomorrow.
Here is another picture of Kylie, enjoying the smells of Valentine's Day.....if she could have, she would have. Yes, she did have some steak too for her dinner....cooked of course, not raw.
I just had to take a couple of these pictures of Kylie.....she is so darned cute with her antics. I think it sure would be a very quiet and boring home if Kylie did not live here.

Does This Not Look Delicious???
Have been doing honey and cinnamon on rye toast or English muffins, or in warm water in the morning or evening. The honey acts as an antibody and cleans up the body along with the cinnamon, not exactly sure what they all do, but Jesus ate honey and butter. If He ate it, must have been healthy to do so, so I shall do it also. I shall have to look up honey and cinnamon and come back with a full report at a later date, or maybe tomorrow.
Well, think this blog shall be short. Need to work on income tax yet, only half way through and it is due at the accountant's office next Monday. My Valentine's tree is still up, guess it has to come down this week sometime. Been working on a bunch of cards to take to the Hospice group on Friday. Cleaned out my Etsy store of old cards that I will not be relisting on Etsy. So, most likely will add them to the cards I am taking to Hospice Care Group. (or whatever their name is). I have about 40 cards ready to go, good start. Also, a good way to unload some cards just sitting around.

"Friday Funday" ~~~ Mushrooms Anyone????
1/2 lb. mushrooms, sliced (I used the Baby Bellas, but I am sure white mushrooms are fine)
2 tablespoons chopped parsley (I used fresh Italian parsley)
2 teaspoons minced garlic (I used the garlic in a jar)
1/2 cup seasoned bread crumbs
1/2 cup grated parmesan
salt and pepper to taste
1/4 cup extra virgin oil
2 tablespoons white wine
In a baking dish toss mushrooms and parsley and garlic. Add 1/4 cup bread crumbs and 1/4 cheese and toss. Drizzle wine and oil and toss together then add remaining bread crumbs and cheese on top. Bake 350 for 20-25 minutes. Enjoy!!!

Ukranian Easter Eggs and a Featured Etsy Artist
Grams held on to alot of her traditions, especially when it came to cooking. I will always remember the big dinners she made for all the family. A big platter of Kubasa, shaved horsradish and eggs. Big bowls of houbah (translation=mushroom gravey [wild mushrooms from the woods]). Pedihare (potatoe and sourkraut dumplings) meat, vegies and desserts galore. And her wonderful Babka (raisin egg bread that she baked in coffee cans) There was always enough food to feed an army and we never went home empty handed. Those were the days of good eaten!!!!!!And Good Food!!!!!
Now I would like to introduce you to Gail, a Ukranian Egg Artist, which I have met on Etsy. Because I like Ukranian Eggs and being it is Easter, one day I typed in Ukranian Eggs and her store came up. I asked her if she would like to be interviewed in my blog and she said yes. So, here we go.............first of all let me start by showing you some of her work. This is probably my favorite egg.......I like purple.
Now on to my interview with Gail.
1. Tell us a little about yourself and how you got started on Etsy? I am the proud Mom of three young men, two of whom serve in the United States Navy, and one who is working toward a college degree. I have been married to the same wonderful man for 34 years. We have a spoiled labradoodle named Toby who is the best dog we have ever had, hands down...he is a joy. I work full time as the supervisor of Microbiology at an 850 bed hospital in Detroit, Michigan. Although I enjoy my challenging job, my passion is my artwork. And, I am fairly new to Etsy, but I am finding it a wonderful experience. I had been selling on eBay for years, but the fees were getting too outrageous…so I was looking for another way to market my wares. My niece, who has a degree in marketing, said to me one day, “You need to be on Facebook, and Etsy, and link them.” Truer words have never been spoken. So, I got on Facebook and set up an account and then onto Etsy and surprise! It works! I got my first order after a couple of days on Etsy.2. When and how did you become interested in making Pysanky eggs? I am a home grown pysanky maker! I am Ukrainian by heritage. My grandmother and grandfather were both Ukrainian and immigrated to the United States in the early 1900’s. Grandma came from Ternopil and Grandpa from Lviv. When they met each other here in the states, my grandmother was saddened by the lack of tools available to create pysanky. She was using a wooden stick dipped in melted beeswax and dipping it on eggs to create very basic patterns. She made her own dyes from vegetables, flowers, and ash. Then grandpa got involved and whittled some small twigs into handles for kistka. He added a small metal tube to the end and tied it all together with twine and tar. Grandma was in business! She created her own pysanky and, of course, taught my mother. I would watch them create pysanky at Easter, enthralled at a young age. But then, I was only allowed to watch. Finally, at about 8 years old, they perched me on a stool next to the melted pot of beeswax and handed me an egg and my first homemade kistka. I don’t remember much about that first pattern other than I was caught; hook, line and sinker. Seeing my attraction, my mom began purchasing products from Surma in New York and then from the Ukrainian Gift Shop in Minnesota. In those days, we only made eggs during Lent, so I would wait anxiously after Christmas for the beginning of Lent. To this day, Lent, which is usually everyone’s least favorite time of the Christian calendar is my absolute favorite time of the year, because it reminds me of the early days when I would enjoy pysanka making.
3. What is your inspiration for each egg and where do you get the ideas? I look at a lot of traditional patterns and am inspired by good geometric design. I love the way angles and squares can fit together to make stars…I probably would like quilt making as well. But I am also inspired by fabric, mosaics, Persian rugs, oriental plates, and, of course, quilts! Colors are a big factor in my work and because of the “batik” way pysanky are made, color can be a challenge. Because the “canvas” is a “natural product” (I guess the chickens would laugh at that one) it doesn’t always conform to your wishes. Colors don’t always dye the color you want. I have learned to be flexible. When I was younger, if the egg didn’t look like I thought it should look, I looked at it as a failure. I never sold them because they were not perfect (in my mind’s eye, anyway). Nowadays, I see the beauty in those eggs. Now, if something isn’t coming out the way I had planned it, well…all the better! Some of the best work I have done is because nature took the reins out of my hands. I am so glad I kept all those “ruined” eggs!
4. How many hours do you spend on each egg? I can do a simple egg in ½ hour. An ostrich egg can take up to 20 hours.
5. How did you feel when you sold your first egg on Etsy? Like a million bucks. To think that someone would pay real money for something I created…I am humbled, honored, and grateful. And....I am an artist. Wow. How cool is that?

mmmmmmmm...mushrooms
Well, I have another wave (the above mushrooms are the second growth) of mushrooms growing in my little box in the basement. Will be looking for them in the next few days, right now they are the size of a little button. In a couple of days they will be eating size.
I just read that mushrooms are very good for you. Although they've gotten a bad reputation for being largely nutrient-free, they're actually a great source of selenium, a mineral that helps to boost your immune system and decrease your risk of cancer. They're also extremely low in calories (about 20 in a cup), so they help you feel fuller at little cost to your weight loss program.
I have been a mushroom fan for many years. But there was a time I snubbed my nose at them. Looking back now I wish I hadn't. Remember the mushroom and gravy bowl being passed around and I would look for the gravy cause there were so many mushrooms in the gravy..........and these were the mushrooms found in the woods. My stepfather's family would go mushroom hunting and come back with baskets full of mushrooms. My mother's chore was to clean 'em and wash'em and cook 'em and bag'em and freeze'em. Then cook'em when the family got together every Sunday for the big meals. Out came those mushrooms..............gosh I wish I had loved them then.................but I didn't.
Now I can't seem to get enough mushrooms which need to be a part of my many meals, breakfast, lunch or dinner. With so many varities to choose from, you can add mushrooms to soups and salads, or saute' them with a little bit of olive oil and seasongs for a wonderful side dish.
